Brand identity and scope: Pepper sauces and condiments. Brand-level history below is not evidence that every product is made in one country or performs alike. Source checked 2026-10-11.
McIlhenny Company says Edmund McIlhenny founded it on Avery Island, Louisiana, in 1868, developing the Original Red sauce there. Its history describes a family-owned business and a later family of pepper sauces with different heat and flavor profiles. The classic red sauce is therefore a precise brand anchor, not shorthand for every TABASCO variety. The brand’s distinctive practice is aging pepper mash in barrels; that history explains why a vinegar-forward aged-pepper condiment occupies a different role from a fresh chile sauce. Brand source.
